The fruit for this wine came from Margaret River. The mild to warm climate, moderated by the close proximity to the sea, provides ideal conditions for shiraz to be grown. The gravelly ironstone loam soils and undulating terrain delivers shiraz that is distinctive to Margaret River.
The 2007 vintage saw flavours developing early due to warm ripening conditions through summer and early autumn.
A small portion finished fermentation in specially selected, new french oak barrels. Following fermentation, the wine was matured in a mix of new and one year old french and american oak barrels. The wine was blended and bottled in early August.
Tasting Notes
The 2007 shiraz is a rich and intense wine with aromas of licorice, blueberries, chocolate and spice. These aromas are followed on the palate with flavours of chocolate, blackberry and mocha coupled with fine velvety tannins. The finish is long and multi-dimensional. This complex shiraz is approachable now and will cellar well for 6 to 8 years.
