Our Odyssey Garden Shiraz has flavours of raspberry, mulberry, plums and cherries, savoury spices and hints of fragrant mocha and chocolate, with a soft velvety mouthfeel. It's a soft, fruity, everyday drinking wine. Great wine with a BBQ!

Margaret River - The Shiraz grapes come from the Knotting Hill vineyard in Metricup.

The style aim for this Odyssey Garden Shiraz is to make it into a softly textured, fruity, easy drinking wine. After picking, it is fermented in a similar way to our other red wines, in an open topped fermenter. After 7 to 10 days fermenting on the skins, it is pressed through a basket press, and then matures in a mix of older barrels and tank on it's yeast lees for 16 to 18 months. The portion in tank has a small number of oak boards added to give the wine an extra tannin lift which adds more weight to the wine when you taste it. WE have also blended in a small amount of malbec (4%) when we getting the wine ready for bottling just to add a little twist on the flavours!

The wine sensory garden is an amazing immersive wine experience that demystifies the world of wine. Each wine in this group is made in a style that highlights the specific fruity, spicy and fragrant flavours of the main grape variety.

This wine has a elegant structure and savoury flavours. The tannins are softer and not as big and powerful in comparison to the Barossa Shiraz wines that Cathy used to make at St Hallett. Keeping that in mind, the recommendation is to pair with dishes of similar texture and similar focus on savouriness. Using our wine sensory garden affinity beds as inspiration, flavours pairings are Italian herb mixes like basil, oregano, and thyme, and also sumac, juniper berries, fennel, chervil, and Tasmanian pepperleaf and pepper berries. Dishes with tomato, squash, white beans, eggplant and radicchio.
