2019 Odyssey Shiraz
The Shiraz grapes for this wine are grown in two vineyards, from the Knotting Hill vineyard in Margaret River, and 10% from a friend’s vineyard in Donnybrook. There is a small amount of malbec (4%) blended in which is from the Knotting Hill Vineyard in Margaret River. The Donnybrook area is part of the Geographe Wine Region, and produces flavours with riper, red and black berry flavours, and a richness to the palate due to the warmer ripening conditions.
The way we handle our shiraz ferments is very labour intensive, but the end results in terms of colour and flavour extraction is well worth the hard work. We ferment our reds in open topped fermenters, with alternating hand plunging, followed by draining off skins into a tank, then returning onto skins with lots of splashing and aeration, happening 2 to 3 times a day. The wine completes fermentation through to dryness on skins then it’s pressed off skins using a basket press. (Still more shovelling!)
We then mature this wine in tank and in older french oak barrels for 16 months.
Our 2019 Odyssey Garden Shiraz has juicy flavours of blueberry, plums and cherries, savoury spices and hints of fragrant mocha and chocolate. On the palate, the red and dark berry flavours continue, balanced by soft velvety tannins. This wine is refined and elegant in style, and is made in a ‘Ready to Drink and Enjoy Now’ style, but it will age for a for a number of years too if desired.
I am a winemaker with over 30 years of winemaking experience. I moved to South Australia from Tasmania in 1995, after working for Pipers Brook Vineyard and Cascade Brewery. I worked at Orlando Wines, then St Hallett Wines in the Barossa Valley, and in 2002 I moved to Margaret River in Western Australia, to work as Chief Winemaker for Watershed Wines. I have gained a solid reputation for making high quality premium wines, most notably Riesling, Sauvignon Blanc, Semillon, Cabernet Sauvignon and Shiraz. I also enjoy writing, and every blog on our Whicher Ridge website is my own!
Favourite Pastimes – owning horses and dogs, gardening, farm life
This wine is a blend of 96% shiraz and 4% malbec. The Margaret River and Geographe Wine Regions consistently produce intensely flavoured shiraz that’s perfect for making a soft, fruity, textured wine .
Vintage in the Margaret River and Geographe Wine Regions started late due to the mild and cool spring weather experienced all across the southern part of Western Australia. The cooler weather continued on into Summer and the milder temperatures during ripening helped to maintain the fresh, floral and fruity aromas in the earlier white varieties. The Shiraz from 2019 is quite stunning in their liveliness and intensity of flavours. The Malbec adds some firmer tannins and flavour length.
The Shiraz grapes come from two vineyards, the Knotting Hill vineyard at Chapman Hill, and the Langley vineyard which is located in the hills between Donnybrook and Kirup. The gravelly granitic deep loamy soils and undulating terrain, delivers cabernet and shiraz that is quite distinctive to the Donnybrook sub-region with a mix of riper blueberry and blackberry flavours, and in warmer years more cherry, raspberry jam and plum flavours.

2019 Mademoiselle V Viognier
We love Viognier for it’s generosity of flavours and it’s ability to match with a wide range of foods, including dishes with spicy, chilli and thai flavours. Warning, you may fall in love with it too!
2020 Odyssey Sauvignon Blanc
The Geographe Wine Region is renowned for making stunning sauvignon blanc wines. Blend a little semillon in with the sauvignon blanc, and it’s a match made in heaven!
2016 Henry Road Chardonnay
Being in the Margaret River region, winemakers here are passionate about Chardonnay and we’re no exception. Our Chardonnay may have been fermented and matured in oak barrels for 11 months, but it’s vibrantly fresh and flavoursome, with an amazingly soft and velvety texture.
