Odyssey Garden Sauvignon Blanc
As the track record of our Elevage Sauvignon Blanc shows, this part of the Geographe Wine Region produces sauvignon blanc with flavours and textures well suited to this wine style. Add in some semillon, and it’s a match made in heaven!
The grapes are harvested when the ripeness level is around 11.8 to 12.5 baume, and when the flavours are in the pear, lemongrass, white peach, sweet lemon spectrum. This wine is fermented in tank, with French oak boards, and the semillon is blended in with the sauvignon blanc at the end of fermentation. We then mature it in tank for 4 months with these oak boards and to assist with the flavour and textural development process, the yeast lees are mixed up into the wine every 2 weeks.
Our 2020 Odyssey Garden Sauvignon Blanc is a blend of 86% sauvignon blanc and 14% semillon. It has lifted and fresh fruity aromas and flavours of white pear, sweet lemon, and hints of gooseberry, mixed with a touch of creamy sweet lemon, a mild chalky, mineral character which is typical of our vineyard, and hints of nutty, toasty flavours from fermentation with oak boards and maturation on yeast lees. The palate is soft and generous, with refined fruit flavours, and balanced by a fine tannin structure and crisp refreshing acidity.
The Geographe Wine Region is renowned for making stunning sauvignon blanc wines. Blend a little semillon in with the sauvignon blanc, and it’s a match made in heaven!
Vintage in the Geographe Wine region started late due to the mild and cool spring weather experienced all across the southern part of Western Australia. The cooler weather continued on into Summer and the milder temperatures during ripening helped to maintain the fresh, floral and fruity aromas in the earlier white varieties. Sauvignon Blancs from 2020 are quite stunning in their liveliness and intensity of flavours.
The Sauvignon Blanc grapes are Estate grown in our Whicher Ridge Vineyard, nestled in a hidden valley in the Whicher Range. Our vineyard is at an elevation of 170 metres above sea level. The vines are planted in ancient gravelly ironstone hillside plantings, and the cool winds at night coming off the Southern Ocean during summer, give rise to wines of intensity and finesse.
The Semillon grapes were grown on the Knotting Hill Vineyard in Margaret River, in an area with similar soils to the Whicher Ridge vineyard
