Odyssey Garden Sauvignon Blanc Semillon

Our Sauvignon Blanc Semillon (SBS) has lifted and fresh fruity aromas and flavours of white pear, sweet lemon, and hints of gooseberry, with a touch of creamy sweet lemon, and some very subtle nutty and lightly toasty flavours. The palate is soft and generous, with refined fruit flavours, and balanced by a fine tannin structure and crisp refreshing acidity.

In the Geographe Wine Region for the majority of the blend. The Sauvignon Blanc grapes are Estate grown in our Whicher Ridge Vineyard, and make up 90% of the blend. The other 10 % of the blend is Semillon grapes which were grown in the Knotting Hill Vineyard in the Margaret River wine region, which has similar soils to the Whicher Ridge vineyard

Our 2022 Odyssey Garden Sauvignon Blanc Semillon is a blend of 90% Sauvignon Blanc and 10% Semillon. The addition of Semillon adds extra weight and richness to the mouthfeel of the wine, as well as lemongrass and citrusy flavours. The grapes are harvested when the flavours are in the pear, lemongrass, white peach, sweet lemon spectrum. This wine is fermented in tank, with a small number of French oak lightly toasted boards, to add an extra layer of flavours and to give the wine a better length and longer flavour finish. The Semillon is blended in with the Sauvignon Blanc at the end of fermentation. The wine is matured in tank for up to 4 months with the oak boards and the yeast lees. The yeast lees are mixed up into the wine every 2 weeks which gives the SBS a lovely creamy, and softer mouthfeel, which balances the crips acidity level.

The wine sensory garden is an amazing immersive wine experience that demystifies the world of wine. Each wine in this group is made in a style that highlights the specific fruity, spicy and fragrant flavours of the main grape variety.

SBS is the acronym which is commonly used by wineries, winemakers, bar staff and bottle shops for white wines which are a blend of Sauvignon Blanc and Semillon. There is also the acronym SSB which is used for a Semillon Sauvignon Blanc white wine blend. SBS has a majority of Sauvignon Blanc in the blend, whereas SSB wines have Semillon as the main variety. Both of these wine blends taste very different as the two grape varieties have different flavours depending on when they are picked.

This wine has a crisper acidity level but it is toned down by the softer, creamier textured mouthfeel, so the recommendation is to pair with dishes of similar texture. Using our wine sensory garden affinity beds as inspiration, flavours pairings are lemon, thyme, lavender, rosemary, dill, coriander, spinach, parsley, lemongrass, dill, green olives, lemon basil, green peppers, pumpkins and lentils, caper berry, and elderflower.
