Whitetail Sparkling Chardonnay is another of our cellar door only wines. It is a ‘Blanc de Blanc’ style, made from 100% Chardonnay, and has been named after the flocks of endangered whitetail black cockatoos that visit our farm regularly during Winter and again in Summer.
The Chardonnay grapes for this wine came from a vineyard close to Cowaramup in Margaret River. The chardonnay clone is gin-gin, mendoza.
The grapes were handpicked, cooled overnight in a reefer, then whole bunch pressed. The free run portion only was used for this wine with the pressings portion being channelled off into another product. All natural acid, with no acid required to be added at any point during the winemaking process. For an extra little twist to add some weight to the palate, I blended in a small volume of 2015, barrel fermented Chardonnay.
This wine was bottled and matured for another 14 months on yeast lees following traditional ‘methode champenoise’ procedures. It was disgorged after 14 months on ‘tirage’, (AKA on it’s yeast lees in bottle), and was released early in 2018.
Our 2016 Whitetail is an elegant Sparkling Chardonnay. It has aromas of green apple, roasted cashews, brioche, a hint of lemon, complemented by a nutty fragrant floral character floating up from the glass. Granny smith apple, toasty and nutty flavours are complemented by a fine, elegant and creamy mouthfeel on the palate.

The colour is medium to light-yellow and it has a vigorous mousse of persistent bubbles. The bouquet suggests cream, cashew nut and egg custard, with hints of toast from development and a small proportion of barrel aged base-wine. It’s soft and fruity, mouthfilling and rich on the palate, with a well-judged liqueur level and great drinkability. As it warms in the glass, some lovely honeyed complexities show through
