Our Odyssey Garden Cabernet Sauvignon has flavours of ripe blueberry, bay leaf, ripe satsuma blood plums, blackcurrants and flavours reminiscent of savoury black olives and dried mint. When tasted, there are velvety soft tannins supporting the berry and plum flavours, giving the wine an amazing length and a welcoming soft mouthfeel.

Geographe wine region - The Cabernet Sauvignon grapes come from two vineyards, our Whicher Ridge vineyard at Chapman Hill, and the Kings Lake vineyard in Donnybrook. The gravelly granitic deep loamy soils and undulating terrain in Donnybrook , delivers cabernet sauvignon with very different flavours to the grapes grow at Whicher Ridge. They are a mix of riper blueberry and blackberry flavours, and in warmer years more cherry, raspberry jam and plum flavours.

The style aim for this Odyssey Garden Cabernet Sauvignon is to make it into a softly textured, fruity, easy drinking wine. After picking, it is fermented in a similar way to our other red wines, in an open topped fermenter. After 7 to 10 days fermenting on the skins, it is pressed through a basket press, and then matures in a mix of older barrels and tank on it's yeast lees for 16 to 18 months. The portion in tank has a small number of oak boards added to give the wine an extra tannin lift which adds more weight to the wine when you taste it. We have also blended in a small amount of shiraz (4%) and malbec (3%) when we were getting the wine ready for bottling just to add a little twist on the flavours!

This wine has a fine, soft tannin texture and a mix of blueberry, blackcurrant and savoury flavours, so the recommendation is to pair with dishes of similar texture. Using our wine sensory garden affinity beds as inspiration, flavours pairings are bay leaf, rosemary, black olive, oregano, sage, thyme, caraway, tarragon and mint, beans, broccoli, kale, beetroot, carrots, pumpkin and lentils.
