2015 Elevation Cabernet Sauvignon – Museum Release

This Elevation Cabernet Sauvignon is aging beautifully! This is a complex and intense wine with flavours of blueberries, dried cranberries, dried mint, oregano, bay leaf, black olive, and hints of cedary, nutty old oak. The layers of flavours are lifted and supported by finely textured grainy tannins. The finish is long, with lingering flavours of mint and blueberries. This wine will continue to cellar well for the next 5 years, or perhaps longer!

Geographe - The grapes are Estate grown in our Whicher Ridge Vineyard, nestled in a hidden valley in the Whicher Range.

The style we are aiming for with Elevation Cabernet Sauvignon, is a medium bodied cabernet style, with complex layers of flavours coming from the grapes, integrated with flavours and tannins coming from extended maturation for up to 2 years in a mix of french oak barrels. We fermented this Cabernet Sauvignon in open topped fermenters, with alternating hand plunging, and draining off skins into a tank, then returning onto skins with lots of splashing and aeration. A portion of the ferment was barrel fermented to add extra complexity. The wine fermented for up to 10 days on skins in both the open topped fermenter and in the barrels, then it was pressed off through our basket press. The Cabernet Sauvignon was matured for 2 years in french oak barrel of different ages.

The 2015 Elevation Cabernet Sauvignon is an intense, tightly wound wine which amazed us in March last year when we had it at a long table dinner for 85 guests in our vineyard. It has opened up with a range of complex flavours from hints of ripe blueberries through to savoury olives and bay leaves. It is more savoury now than in it's youth and the tannins have softened beautifully as the wine is getting older. It is aging gracefully, and will continue aging well for the next 5 years or even longer. The aging in the cellar has been done for you, and it would make a perfect gift.

This wine has a fine powdery tannin texture and a mix of blueberry and savoury flavours, so the recommendation is to pair with dishes of similar texture. Using our wine sensory garden affinity beds as inspiration, flavours pairings are bay leaf, rosemary, black olive, oregano, sage, thyme, caraway, tarragon and mint, Beans, broccoli, kale, beetroot, carrots, pumpkin and lentils.
