The style aim for this Odyssey Garden Mourvedre is to make it into a softly textured, fruity, easy drinking wine. Our Mourvedre hasn't been matured in oak at all. After handpicking, it is fermented in a similar way to our other red wines, in an open topped fermenter. After 7 to 10 days fermenting on the skins, it is pressed through a basket press, and then matures in tank on it's yeast lees for 12 to 16 months. It has been made to be chilled during summer, so go ahead and treat it like a white wine when it's warm and hot. It shines when chilled as the chilling accentuates the fruity flavours and they pop out of the glass!
